CHILI WITHOUT TOMATOE SAUCE OR BEANS
Ingredients:
2 pounds of lean meat chopped into small pieces
(beef or chicken or pork)
2 large white onions chopped
1 clove garlic
1 large green pepper ( I personally leave
it out)
1/4 cup bacon grease or oil of your choice
2 cups boiling water
seasonings to include: cumin, chili powder,
black and red pepper, seasoned salt to taste and if desired, addtional
garlic powder.
Brown the meat and onions, peppers in
the oil in a heavy skillet or dutch oven then add the boiling water and
seasonings. Simmer and stir occasionally to keep the meat from sticking
on the bottom and burning. Or put into your slow cooker and let it cook
till dinner. This is a no-tomato, no-bean dish so perfectly legal for us
Caders or Atkins followers. If you perfer your chili Hot, then add a jalapeno
pepper or two to taste and 1/2 to 1 tbls tabasco or hot sauce.
